This Javan Dark Breaking bean stopped me in my tracks. It’s an adventure in taste, with its rich caramel and toffee flavours born in the volcanic soils of Surabaya. That’s why I make all my chocolate from‘bean to bar’, to capture the stunningly individual flavours of the world’s great single estate cacaos . All my chocolate iscraft made in small batcheswhich takes up to 21 days at low temperatures compared to industrial chocolate which is made in a few hours. The chocolate is100% naturalcontaining simply cacao, raw cane sugar and natural cacao butter – no vanilla or soy lecithin to hide the beautiful flavour of the beans.
