LET'S TWIST AGAIN....

MEGA HERBY FUSILLI
1 X 500g Fusilli Pasta (screw pasta)
1 x 190g jar green pesto
PIMP IT
ROCKET, BASIL, PARSLEY, MINT, BROCCOLI (shave the broccolli on the small
side of a grater)
Literally aim to gather 3/4 cups of finely chopped greens
+ one garlic clove finely chopped
Olive oil
LET’S DO THIS
Cook pasta in a large pot of boiling salted water, stirring occasionally, until al
dente (firm to the bite). Drain pasta, reserving 1 cup pasta cooking liquid.
Empty the jar of pesto, 3 cups of assorted finely choppped herbs and the garlic.
Toss (tongs are good for tossing) and add a little of the reserved pasta water.
You want it to be a clingy sauce! Clingy :-) Drizzle with 3-4 T olive oil. Serve it
warm. Shaved hard cheese is good. Cracked black pepper essential.
A simple sliced tomato salad dressed with olive oil, salt and zested lemon rind
would just finish this off nicely.
SERVES A FAMILY of 4:
LEFT OVERS? Tupperware and serve for lunch cold as a salad. Add chopped
green chilli and olive oil to kickstart it again.
